Green Goddess Dressing

This food processor Green Goddess dressing is oh-so herby and delicious: herbalicious if you will. I tend to make mine with parsley, basil, scallion, and a bit of mint, but you can really use whatever greens you have on hand.

The Green Goddess dressing goes great on top of your favorite salad, or if made a bit thicker, makes the perfect dip. No matter how you use it, it’s always a crowd favorite.

Ingredients

  • 1/4 cup sour cream

  • 1/3 cup cottage cheese (or Greek yogurt)

  • 1/4 cup parsley, loosely packed

  • 8 basil leaves

  • 1 scallion stalk

  • 3 mint leaves

  • 1/2 lemon, juiced

  • 1 clove garlic

  • 1 Tbsp olive oil

  • Pinch red pepper flakes

  • Salt and pepper to taste

  • Water, to thin

Instructions

  1. Combine all ingredients, besides water, in a small food processor.

  2. Blend until herbs are chopped well, cottage cheese is smooth, and mixture is consistently distributed.

  3. Slowly add water in, a bit at a time, to thin the sauce to the desired consistency.

  4. Drizzle atop favorite salad or use as a delicious dip!
