Green Goddess Farro Salad

I have a hard time with salads. I’m always hungry afterward, looking for more. However, this Green Goddess farro salad is packed full of nutrient dense deliciousness. From the pumpkin seeds and pistachios to farro to fresh herbs, it’s a guarantee you’ll be satisfied after this one.

Ingredients

  • 2 1/2 cups farro, cooked

  • 1/2 head large lettuce or 1 small head, shredded

  • 1 1/2 cups sugar snap peas, sliced

  • 1 cup radishes, julienne

  • 1/2 avocado, cubed

  • 2 Tbsp pistachios

  • 2 Tbsp pumpkin seeds

  • Green Goddess Dressing

Instructions

  1. Cook the farro according to package instructions. I usually do half water and half vegetable broth, with a pinch of salt and drizzle of olive oil. Once cooked, set aside to cool.

  2. Chop each vegetable to desired shape.

  3. In a large bowl combine farro, lettuce, sugar snap peas, radishes, and avocados.

  4. Mix well.

  5. Top with pistachios and pumpkin seeds.

  6. Drizzle Green Goddess Dressing on top.

  7. Mix and enjoy.

    *Optional add-ins include fresh micro greens, soft boiled eggs (for 6.5-7 minutes), or your favorite cheese
