Greek Style “Meatballs”
One of my go-to meals is any type of Greek/Mediterranean bowl. I find them super easy to assemble and there are lots of options to mix and match. The one place that I lack when eating this way is in the protein department.
These Greek-inspired meatless “meatballs” are utterly delicious and amp up the protein of any dish. I prefer to eat them in a bowl, with a few of my favorite dishes combined to create the perfect meal. They’re a little spicy, tangy, and of course, juicy.
Ingredients
24 oz ground Impossible Beef
1 cup Panko breadcrumbs
1 egg
3 garlic cloves
1/2 large red onion, diced or grated
1/4 cup parsley, chopped
4 mint leaves, chopped
1/8 tsp dried oregano
1/8 tsp red pepper flakes
1 lemon, zested
1/2 tsp olive oil
Salt and pepper to taste
Instructions
Preheat the oven to 425 F.
Add all of the ingredients to a large bowl. Mix well until all parts are evenly distributed. (Pro tip: for easier rolling, pop the mixture into the fridge for an hour before assembling the meatballs).
Shape into rounded balls, making about 20 large meatballs 1 1/2 inches across. For more meatballs roll them a bit smaller, about 1 inch across. If you choose to make smaller meatballs keep a closer eye on them in the oven as cooking times may vary.
Place the meatballs on a lined baking sheet.
Cook for 20 minutes on the middle rack of the oven.
Enjoy with whatever your tastebuds desire
*I assembled mine with seasoned cous cous, cooked zucchini, cucumber-tomato-olive salad, and tzatziki. Some other great options include pita, feta, or chickpeas.
