Vegetable Hand Roll
Anything that is quick and easy to throw together - sign me up. I initially created these veggie “hand rolls” when I had a bunch of produce that was about to go bad. I’m glad I did, because it was so delicious, easy to replicate, and used those soon-to-expire ingredients. You can really put anything that your heart desires into these hand rolls. The possibilities of flavors is endless.
Ingredients
Vegetables
Cucumber
Carrots
Red onion
Avocado
Mango
Tajin or chili lime seasoning (optional)
Hand Roll Base
Sushi rice (the microwavable one works great)
Seaweed snack pack(s)
Rice vinegar (optional)
Mirin (optional)
Sugar (optional)
Dipping Sauce
Soy sauce
Rice vinegar
Trader Joe’s chili onion crunch (or something similar)
Instructions
For starters, julienne each of the vegetables to the best of your ability. The mango and avocado are a bit more difficult to julienne, so just focus on slicing them as small as possible, and as safely as possible. Set the chopped vegetables aside for later. (*Optional step: sprinkle a small amount of tajin on the avocado for an added flavor boost).
After slicing the vegetables, make the rice according to the package instructions. I actually prefer the 90-second microwavable Japanese sticky rice. It is hassle-free and turns out pretty great for what you need it for. (*Optional step: sprinkle a small amount of rice vinegar, mirin, and sugar on the rice after cooking and mix. This step gives the rice a little bit more flavor and can really elevate the taste of your meal).
In a small bowl mix together 3 parts soy sauce and 1 part rice vinegar, for whatever quantity you will be needing. Top the dipping sauce with the chili onion crunch and mix thoroughly.
Plate it up! Arrange the vegetables and rice, with your seaweed snackers and dipping sauce ready to go.
To assemble: take a piece of seaweed and layer it with a small scoop of rice. Alternate placing different vegetables on top of your bed of rice. I tried both dipping in the sauce and drizzling it on top of the hand roll. I found that drizzling it on top made it so much messier but dispersed the flavor better. I’d recommend dipping each bite in the sauce for a bit of an easier cleanup.
