Homemade Marshmallows

Homemade marshmallows are an instant crowdpleaser. If you have a few extra minutes I highly recommend whipping these up. They’re really not as hard as you would think.

These marshmallows are great on their own, dipped in chocolate and topped, cut into fun shapes, or even floating in your hot chocolate. Oh so ooey-gooey, delicious.

Ingredients

  • 2 cups granulated sugar

  • 1/2 cup light corn syrup

  • 1 cup water, divided into two

  • 3 1 ounce gelatin envelopes

  • 1 tsp vanilla extract

  • Pinch of salt

  • 1/4 cup cornstarch

  • 3/4 cup powdered sugar

Instructions

  1. In a pot with a lid combine granulated sugar, corn syrup and 1/2 cup of water. Bring the mixture to a boil over medium heat. Turn down to low heat, cover, and cook for about 2 minutes. Remove the lid and cook for an additional 6 minutes, stirring frequently.

  2. In a stand mixer with whisk attachment combine the other 1/2 cup of warm water and gelatin envelopes. Whisk until fully incorporated. Add in the boiled sugar mixture. Whisk for at least 5 minutes, until the mixture becomes white and starts to come together. Mix in the vanilla and salt. Whisk again until the marshmallow mixture becomes thicker. (It should be thick that it doesn’t immediately run off of the whisk, but no need for stiff peaks).

  3. Combine cornstarch and powdered sugar in a separate bowl.

  4. Line a 9x9 baking dish with parchment paper. Dust the bottom with some of the corn starch-powdered sugar mixture.

  5. Pour the marshmallow mixture into the baking dish. Dust the top with more of the corn starch-powdered sugar mixture. Cover the baking dish with aluminum foil and let sit for at least 5 hours.

  6. Uncover the marshmallows, remove from pan, and cut to desired shape and size.

  7. Toss the marshmallows in a bit more corn starch and powdered sugar, to prevent sticking later on.
